This coffee comes from Chiapas, Mexico, the country's southernmost state and one of its most important coffee growing regions. Chiapas shares a border with Guatemala, and coffee has long been part of the agricultural life of its mountainous interior.
This particular lot was grown between 900 and 1,000 meters and brings together four classic coffee varieties: Bourbon, Caturra, Mundo Novo and Typica. It's fully washed after harvest and mechanically dried.
HG = High Grown, a coffee classification tied to growing elevation.
EP = European Preparation, refers to additional sorting of the green coffee to remove defects.

Our roasters took this one to a light roast and found some really lovely notes of brown sugar & dark chocolate with a nice lemon acidity.
Try this one as a breakfast/ brunch coffee with a little treat. It's a perfect combo.
